Have you nibbled on nibs yet? Cocoa nibs, aka cacao nibs, are bits of roasted cocoa bean that have a crunchy texture and a deep chocolate flavor. They've come into fashion in the last few years and are now commonly found in some upscale candy bars or sold as little chocolate-coated nuggets. Cocoa nibs are not sweet (like, AT ALL) but that makes them a good pairing with a sugary-sweet brittle--they give the essence of chocolate without the usual chocolate additives like dairy products or sugar. I really like this brittle plain (I am literally munching on some as I type this) but I always make sure to save some of this brittle to use in other desserts. It's excellent crumbled up in ice cream or baked into cookies like the world's most decadent toffee bits.
