Cream Cheese and Honey Truffles combine the tang of cream cheese and the floral sweetness of honey with rich chocolate. You can use any honey you have on hand, but if you want to really taste it, be sure to use a strong, robust honey that can stand up to the chocolate and cream cheese flavors. I use a raw honey I buy from the farmer's market, and I find it makes a big difference in the finished product.
