Marzipan, a nut paste, can be colored and sculpted to form beautifully realistic fruit decorations, such as oranges, lemons, or bananas. These fruits look beautiful on top of cakes, cupcakes, or tarts.
You can make your own marzipan, or purchase it from most large grocery stores. Marzipan most commonly comes in 7-ounce tubes (the quantity called for here) but you can use more or less depending on what you have available.
1. Coat your hands with powdered sugar, or wear plastic gloves.
2. Knead the marzipan until it has softened slightly. If you are going to make several different fruits, divide the marzipan into groups now, before coloring.
3. To make lemons: Flatten the marzipan into a disc, and add a few drops of yellow food coloring to the middle. Fold the marzipan into a ball and begin to knead the color throughout the dough, adding more food coloring if desired, working until the marzipan is one uniform color. Roll the dough into small balls the size of a nickel. Elongate and taper the ends of the balls so that they are lemon-shaped. If you like, you can use a toothpick to poke small holes in the lemons to create the texture of citrus skin. Poke a dark-colored candy jimmy into the end of the lemon to be the “stem.â€
4. To make oranges: Flatten the marzipan into a disc, and add a few drops of red and yellow food coloring to the middle, using a ratio of 1 drop red to 2 drops yellow. Fold the marzipan into a ball and begin to knead the color throughout the dough, adding more food coloring if desired, working until the marzipan is one uniform color. Roll the dough into small balls the size of a nickel. If you like, you can use a toothpick to poke small holes in the lemons to create the texture of citrus skin. Poke a dark-colored candy jimmy into the end of the orange to be the “stem.â€
5.To make bananas: Flatten the marzipan into a disc, and add a few drops of yellow food coloring to the middle. Fold the marzipan into a ball and begin to knead the color throughout the dough, adding more food coloring if desired, working until the marzipan is one uniform color. Separate the dough into small balls the size of a nickel. Roll a ball between your fingers to create a thin tube. Slightly curve the tube so that it is shaped like a banana, and elongate one end to be the top. Poke a dark-colored candy jimmy into the end of the banana to be the “stem.†Repeat with remaining marzipan.
6. Store marzipan fruits in an airtight Tupperware container for up to two weeks, or freeze well-wrapped marzipan fruits for up to three months.
