My husband loves bananas foster. Sometimes our college dining hall would serve it (weird, right?) and he would always take a big helping and rave about how much he loved this dessert. (Even weirder, right?) But, despite the fact that he was probably the only young man in college who preferred cooked bananas over chocolate cake, I married him anyway, and in the years since, have made it for him occasionally as an extra-special treat.In that same spirit of wifely generosity, I created this candy based on the classic dessert, Bananas Foster Truffles. These gourmet goodies feature bananas roasted in a brown sugar-cinnamon-rum sauce, and then all of those elements are incorporated into a rich chocolate ganache. We like ours rolled in cocoa powder (because the husband thought "more chocolate would dilute the banana flavor") but you can definitely dip these in white or dark chocolate instead. Give them a try and see if you don't go ape for these banana truffles!
